Elizabeth Jane Lyons Latimer
“Betty”
Manti
1922 - 2008
One of the very most loving and caring persons to have ever walked this earth has passed from our midst. Elizabeth Jane “Betty” Lyons Latimer, 85, passed away in Nephi, Utah on the morning of June 23, 2008, from an unknown cause occurring as a complication of pneumonia following hip surgery.
Betty was born into a very Irish family in Joliet, Illinois on December 27, 1922. Her parents were Thomas Joseph and Rosella McPartlin Lyons.
Betty was a top student through high school. During World War II, Betty worked as a “Rosie the Riveter” in several munitions and aircraft plants, and married a soldier. Following the war, Betty lived in a number of western mining towns before making her home in Colorado Springs, and then in Canon City Colorado. Betty joined the LDS church, her lifelong faith from that point, while in Colorado, and followed her son Carl, to whom she was ever devoted, to Ephraim, Utah when he started teaching at Snow College in 1991.
Betty will be remembered by everyone for her quick Irish wit/sense of humor, but more especially by her special way that made everyone around her know that they were loved unconditionally. Betty had faced numerous serious illnesses throughout her later life, always with amazing courage and faith in the afterlife—and had always come through.
Betty is survived by son, Carl Thomas Sullivan Sr., Sterling, Utah; stepson William John Cackovic, Jr. Amarillo, Texas; stepdaughter, Cecelia Freeman, Alamosa, Colorado; sister Rosemary (Mike) Owens, Canyon Country, California; grandchildren LT. Lynn William Sullivan and Haruka Sullivan, Fort Bragg, North Carolina; Rachelle Shields, Saint Louis, Missouri; Chisato Ichikawa, Nephi; Dennis Hurel (Sully) Sullivan, Salt Lake City; Makoto Ichikawa, Logan; Sharee Elizabeth Sullivan, Sterling; Carl Thomas Sullivan, Jr. Granby, Missouri; Daniel Charles Sullivan, Granby, Missouri; three great-grandchildren, close family members, friends and loved ones in Sanpete Valley and Colorado.
More recently, Betty had developed a close friendship with Lee Anderson and family of Fountain Green, Utah, who brought so much joy and sunshine into her life.
Betty was preceded in death by parents; sisters Virginia (Murph) Prodehl, Zita Eneix, husbands Hurel Esco Sullivan, William Cackovic Jr., and Charles Latimer.
How many times can it be said that the greatest person you have ever known is your mom/grandma/close friend? In this case, it is true. Her jokes, smile, wisdom, optimism, and overwhelming love will be forever missed.
